Random Recipe

Another!! And it's gooooood. Bite-sized desserts are always good because they're just enough.

Swirled Cheesecake Nibbles

36 vanilla wafers
1 ten-ounce pkg Nestle Toll House Swirled (semi-sweet/white choc) morsels
2 pkgs (8 oz EACH) cream cheese (room temp)
1/2 C granulated sugar
2 T all-purpose flour
2 large eggs
1 T vanilla extract

Preheat oven to 350 degrees. Place 36 two-inch foil baking cups on a baking sheet with sides. Place one vanilla wafer, flat side down, in each baking cup. Place 5 or 6 choc morsels on top of each wafer.

Beat cream cheese, sugar, and flour in a large mixing bowl until creamy. Add eggs and vanilla extract; beat well. Spoon a heaping tablespoon into each baking cup.

Bake for 15-17 minutes or until just set and NOT browned. Remove from oven and place on wire rack. While the cheesecake bites are still hot, top with a couple of morsels. Cool completely before eating.

Store in refrigerator.

Makes roughly 3 dozen mini cheesecakes. YUM.
