Random Recipe

Wahoo! Another installment of super easy recipes for the cooking-impaired. Even though Kev is not a huge fan of seafood, he tried this one. And I added bits to this!! Me!! All by myself. It's supposed to be just a scallops and tomatoes dish, but I decided it was too weak as is and put it on pasta. Delicious spiral pasta in regular, tomato and spinach flavors. Delish. Try it.

Scallops with Tomatoes and Basil over Pasta

8 to 12 large sea scallops, halved
-Salt and pepper to taste
3 T margarine, divided
2 tomatoes, peeled, seeded and chopped
2 T chopped, fresh basil or 2 tsp dried basil leaves

Bring water to a boil for pasta, and cook about 10 minutes (for 2 cups) or until desired firmness is achieved.

While pasta is cooking...

Dry scallops with paper towels; season with salt and pepper.

Heat 2 T margarine in large nonstick skillet over medium-high heat.

Arrange the scallops in a single layer in the skillet; cook for 1 to 2 minutes on each side or just until cooked. Transfer scallops to a platter and keep warm.

Melt remaining margarine in same skillet over medium-high heat. Add tomatoes and basil; heat through.

Spoon tomato mixture over scallops and serve on your favorite pasta.


***NOTE*** This makes just about 2 servings, so double up ingredients if you're cooking for more than just yourself!! If you are absolutely against seafood, it's still delicious just to have the tomato and basil sauciness on your pasta.
