Simple and delicious pasta-bake

I am by no means a good cook. I am really good at heating stuff up in the oven. I can make banana cream pie from scratch, and crock-pot bread. I don't really have the time or patience to make "real" meals on a daily basis for me and Kev. It's kind of sad. When I get home after work (either 6 or 7) I'm so tired and hungry that I can't stand the thought of cooking something wholesome and delicious.

That's where this easy pasta-bake comes into play. I found it on a blog... and I don't remember which. But it's ok because it doesn't have any measurements anyway. I made up my own. I'll share with you what I did and what I wish I had done.

1 container hearty pasta sauce
4 cups egg noodles (fed 4 adults with leftovers)
1/2 cup ricotta cheese
2 cups shredded mozzarella cheese
Parmesan cheese for topping

I under-cooked the egg noodles and then layered all my ingredients twice as ordered above. I didn't use both cups of shredded mozzarella and I wish I had. I also wish I'd added more Ricotta. The layered pasta meal goes into a 400 degree oven for 25 minutes. I covered mine the whole time and it still made the top a little crispy, which was great. I might use a meat sauce next time or brown my own hamburger and add it in. We'll see.

I served it with crock-pot bread and crumbled parmesan cheese as an optional topping. SO GOOD. It's basically lasagna. But I've never made my own lasagna before so I was pretty impressed with myself. And who doesn't love a recipe with only 4 key ingredients?

Happy eating!
