4 Simple Goals -- Kev's birthday!

I was so excited for Kev's birthday because this year we did something different (again) for his birthday cake. I found this candy-bar-inspired cake recipe in Martha Stewart (the same one that shared the pear pastry crisp recipe) and Kev said he wanted to try a candy cake for his birthday.

Sorry Martha, but I didn't make the cake, caramel and frosting from scratch. I used a cake mix, caramel ice cream topping, and store-bought frosting. I only have so much time on my hands!!

What makes this cake like a candy bar is the filling- it's crispy rice cereal coated with melted milk chocolate. Once that is all mixed together, you stick it in the freezer and then bust it up into little pieces. Those delicious candy bar pieces go in between layers of cake with caramel drizzled on top.

Then the cake gets sandwiched together and frosted. I let it set up in the fridge as indicated and commenced taking 30 photos of Aspen as we hung out while dinner cooked.

I felt a little guilty that I didn't even get Kev a present, but the effort put into the cake was enough for him. Plus I kept Aspen alive for the last two months, so that's a pretty good present. Plus my mom sent him an amazing book that he asked for so he actually had something to open after dinner. Phew.

Kev, happy birthday. I'm so glad I've been able to celebrate so many happy days with you. I'm sorry the cake was too chocolately for you. On the bright side, it helped me progress with my 4 simple goals, so thanks... Next time we'll opt for something less overwhelming when it comes to chocolate. Maybe Sour Patch Kids kabobs?
