Random Recipe

I read this recipe on Melissa's blog and decided to try it and then eat a whole batch by myself.

Kidding! I'm not that out of control.

Although I went grocery shopping to stock up on some of the ingredients, I couldn't find flax at the store, so I added wheat germ and finely chopped (in the food processor) almonds. With the extra dry ingredients, I ended up doubling the amount of PB, and maybe the honey, too. That was hard to determine because my honey is so old it's thick and crystallized. So yeah... just add enough wet ingredients to make this a mold-able dough.

No-Bake Energy Bites

1 C Oatmeal
1/2 C Peanut Butter
1/3 C Honey
1 C Coconut Flakes
1/2 C (ground) Flax
1/2 C Chocolate Chips
1 tsp Vanilla

Combine ingredients and chill for half an hour. Roll into balls and store chilled.
