Random Recipe

I made bagels from scratch last week, and even though I got bored waiting for the dough to rise (ON THREE SEPARATE OCCASIONS) it was worth it.

With my lactose-intolerant, I even have trouble with some bread products. Most store-bought breads have milk in them. Which sucks. SUCKS!!!!! I love bread. I could eat a bagel every day for the rest of my life and never get bored. Even if it was a plain one. Un-toasted. With no toppings.

I was glad to find a recipe that seemed pretty straight-forward, and even more pleased when my friend Dixie gave me her extra mixer so I could handle the thought of making dough. I really really really hate making dough by hand.

Anyway. These bagels. REALLY REALLY REALLY GOOD. Straight from the oven I ate two. I altered this recipe a little as follows:

1 pkg dry active yeast
1 T sugar
1 3/4 C warm/hot water
3 C bread flour
1 C wheat flour
1 T flax seed
1 T salt
1 egg (for egg wash)

-combine yeast, sugar and hot water in mixing bowl. Let stand about 5 mins until foamy.
-gradually add in flour. Scrape sides of bowl and allow mixer to create a tacky dough. If necessary, remove from bowl and knead by hand for a few minutes to get desired consistency.
-allow dough to rise in a covered, greased bowl for 1 hour (or until doubled in size).
-once risen, divide into 12 equal-sized balls. Cover with a clean towel and let rise about 30 minutes more.
-bring water to a boil and preheat oven to 400 degrees.
-shape bagels by pushing thumbs/fingers through dough balls. Make holes larger than you think you should because they're going to shrink when you cook them.
-let shaped bagels "rest" about 10 minutes.
-boil each bagel 2 mins on one side, followed by 1 min on the other. Let bagels dry on a towel and then transfer to lined/greased baking sheet.
-wash each bagel with lightly beaten egg and cook about 20-25 mins in oven.

Voila. Done and done.
