BEST lactose-free cookie ever. EVER.

I've been pretty lazy lately when it comes to lactose-free eating. Meaning, rather than take the time and effort to make delicious meals that are lactose free, I instead eat toast (there's a bakery in Kaysville that makes lactose-free bread that's sold at Target).

But after my particularly bad Saturday last week, I needed something to fill the void in my life. So I looked up a chocolate chip cookie recipe that would rock my world.

My mom sent me some lactose-free chocolate chips months ago, and I found a recipe online that promised big, fluffy cookies. Boy, did it deliver.

Since I rarely eat anything with fat in it (because it's usually butter-based and I don't have a death wish) I probably shouldn't have eaten five of these cookies in one sitting. My body didn't know what to do with all the shortening. It was like, WHOA. But my taste buds were also like, WHOA. So yeah. Taste buds win.

It's just a basic cookie recipe with shortening instead of butter, but I have never in my life been able to make an attractive, soft chocolate chip cookie. This was a much-needed triumph in my life.

And in case you also need a lactose-free recipe, here it is:

3/4 C shortening
1 C brown sugar
1/2 C granulated sugar
2 eggs
1 T vanilla
2 1/4 C flour
1 tsp salt
1 tsp baking soda
1 C soy chocolate chips

Preheat oven to 350 degrees
Cream shortening and sugars, then add eggs and vanilla until well-mixed.
In separate bowl, mix all dry ingredients together.
Gradually add dry mixture to wet and mix until dough forms.
Stir in chocolate chips.
Roll into balls and bake on wax paper for 12 minutes, or until you notice the cookies are barely browning.
