Lactose-free pumpkin pie from scratch

Making a chocolate Jell-O pudding pie is WAY EASIER than making a pumpkin pie from scratch. Doesn't that seem so obvious? Yes, yes, it does. Before my sister went on her mission, she was in charge of the pudding pie (among other things) so I kind of forgot how easy those are to make (in case you're wondering, it's: Jell-O pudding mix + 2.5 C milk = PIE).

However, with my lactose-intolerance, I knew that I deserved to have at least ONE pie that I could eat without any negative digestive consequences. Enter: the homemade pumpkin pie.

I busted that dang pumpkin open and then realized I had no idea how to get the guts out. I don't think I've ever carved a pumpkin, so I didn't know what I was getting into. Oops! But it's okay. Eventually I scraped most of the stringy stuff out and was ready to bake it and make my house smell amazing.

Dairy-free pumpkin pie (from scratch):

1 small pumpkin (enough to yield 2 mashed cups)
1 C almond milk
3 eggs
3/4 C sugar
2 T (combined): cinnamon/ginger/nutmeg (you can use whatever you like, actually!)
pinch of salt

-Bake scooped out pumpkin 1 hour at 350 degrees (on covered baking sheet with olive oil)
-Cream baked pumpkin with milk in mixer
-Beat eggs, sugar and spices into pumpkin mixture
-Warm mixture on medium/low heat (you don't need to boil it)
-Bake pie in crust 30-40 mins at 350 degrees

I used ready-made pie crusts (one graham and one nilla wafter) that were also dairy-free. In my local grocery stores I'm not having any luck finding non-dairy butter sticks so making a pie crust was out of the question (also? I'm REALLY LAZY). In the future, I think I'll go ahead and make pumpkin pie from scratch again. It really wasn't too hard and it's worth the effort for me to be able to eat something without getting sick.

  1. That is awesome you were able to make pumpkin pie yourself. Thanksgiving isn't Thanksgiving without pumpkin pie. I made a s'mores pie that was amazing. Very easily my new favorite dessert. I have already bought the ingredients to make it again.
