Bananananananana Bread

I love finding a lactose-free recipe that doesn't just suggest I use milk substitutes/butter substitutes in the mix. I like using something a little more creative and less expensive. I pinned this bread a while ago and finally made a version of it right before Christmas. It was super-moist and delicious! Due to what I had on hand, I varied the recipe slightly.

Lactose-Free Banana Bread

2 C flour
1 tsp baking soda
1/4 tsp salt
1/2 C apple sauce (I used a peach-flavored applesauce)
3/4 C honey
2 beaten eggs
2-3 mashed bananas
chocolate chips (I used SOY "chocolate" chips that are actually vegan)

Pre-heat oven to 350 degrees
Combine dry ingredients in large bowl
Combine apple sauce and honey; add eggs and mashed bananas
Stir wet ingredients into dry
Add chocolate chips (use however many you want for the right ratio per bite!)

Bake 60-65 minutes in greased loaf pan (makes one loaf)

*NOTE* Amanda, I'm really sorry I forgot to bring this to your family when I stopped by after Christmas and that I had to eat it myself. SO SAD (for you).
