Freezer meals for Christmas

I was assigned my older brother for Christmas this year, and since he never makes a list of anything he wants or will give me a straight answer when I ask, I just went ahead and did whatever I wanted for his present. TAKE THAT! I mean, there were some clamp things Kev gave me to give to Seth, but other than that I had no idea what to get him (and I don't even know exactly what I gave him via Kev...).

I thought a lot about it and decided to make him some freezer meals that he can heat up in his crock pot while he's at work, or running around on a Saturday picking up scrap metal. It's something I'd love to get for Christmas, so I figured it was a safe route to take.

I made five different meals, and I actually made enough for me to keep some for myself, too (and Seth's servings were still big enough that he'll have leftovers). This was really easy, and I only spent about an hour in the kitchen to prep everything.

I made Teriyaki Chicken and Sweet 'n Tangy Meatballs from this site (I used my own Taco Soup recipe but you can find one there, too). From this site I made Teriyaki Pork Chops and Garlic Honey Chicken. You can find loads more options via Pinterest, or just make some of your favorite recipes and freeze portions of them for later. I hope to do this at least once a month so I have a few "backup" meals prepared. I've been horrible about meal planning since we moved to WJ, so this really helped me get back on track.

So far, we've eaten the meatballs (with white rice) and they were delicious. The teriyaki chicken turned out okay too (adding that extra 1/4 cup sauce might have been overkill, though). I've got my fingers crossed that the rest are just as good!
