Roasting brussel sprouts

It seems like brussel sprouts are the new cool kids on the block. I don't know that I've ever tried them, so I grabbed them on impulse at the grocery store this week.

I had no idea how I was going to cook them, but I imagined coating them with olive oil and baking them would do the trick. I checked online for a recipe and confirmed that yes, cooking brussel sprouts is indeed that easy.

And, surprisingly, they were delicious. I doubted the outcome while they cooked because they stunk up my house... but I was rewarded! Since I was making these just for myself (and my picky kid) I only cooked 12 or so. It was more than enough for just me since Aspen took one bite and literally shuddered as she swallowed.

Roasted Brussel Sprouts

3 T olive oil
1 tsp salt
1/2 tsp pepper

pre-heat oven to 400 degrees
clean up sprouts- removing browned leaves/imperfections and rinsing
cut into halves or wedges
coat with olive oil, salt and pepper in a bowl or ziplock bag
spread evenly on lined baking sheet
cook 30 mins or until browned/charred, taking the pan out every 5-10 mins to shake the sprouts around

Have you had brussel sprouts before? What's your favorite variation? I saw that Melissa pinned a garlic dipping sauce to go with roasted sprouts and that looked SO GOOD.

  2. One of my friends said she roast them like this and then uses them as "meatballs" in spaghetti and sauce. I'm going to try that this week, too.

  5. I haven't ever had them but you made them look yummy so I tried it. They were okay, but not as amazing as I had hoped. My husband told me it would be okay if I didn't buy them again. Haha. But you got us to try something new, so thanks!

  6. Kev's had them before and knows he doesn't like them, so he didn't even try them. I think they definitely are an acquired taste; there's something weird about them, but I liked it!
