Chicken, avocado and bacon quesadilla

Quesadillas always make me think of Napoleon Dynamite. Who's with me on that?

I pinned what I thought was a recipe for this but it turned out to be a link to an ad page so someone can make money from pageviews. Lame. A quick search later and I landed on a legit blog post for some tips on making this the best dang quesadilla ever.

For this recipe I used almost a full 20oz bag of frozen, diced grilled chicken (Target brand), but you could use more or less, depending on how big your tortillas are (I used medium-sized ones). I burned half of my bacon when I tried to bake it, so I only used four slices for four quesadillas the second time around (I think I'm officially a microwaver of bacon- it never fails!). But at least when I burned the first batch, I still had bacon fat to skim out and use to fry up the chicken.


1-2lbs cubed chicken
4-6 slices bacon
butter (I use Earth Balance soy-free pretend butter)
salt & pepper (which I'll omit next time because the bacon makes it salty enough)
lime wedge

Cook bacon, and use about 1T of the grease in a frying pan to heat/cook cubed chicken. Salt and pepper chicken to taste, and squeeze juice from lime wedge over chicken once it's fully heated/cooked in frying pan. Set chicken and bacon aside.

Wipe pan clean and melt enough butter to cover the pan. Heat tortillas in butter until golden, and fill with chicken, bacon (in bites or slices), avocado and shredded cheese. Fold tortilla in half and allow cheese to melt before removing from pan. These measurements made four quesadillas.

The best part of this dinner was seeing Aspen eat it. She wasn't interested in an actual quesadilla, but all the fillings suited her. I think she ended up eating half an avocado, which is fine by me. I've never cooked tortillas in butter (or fake butter) before and I'm never going back! It was such a nice touch to have a crispy crunchy quesadilla instead of a floppy, soggy one. I think I could eat these every day. Bacon is seriously my favorite food ever.
