Lactose-free Pancakes

HAPPY SOON-TO-BE FOURTH OF JULY!!

If your toddler gets up at the crack of dawn like mine, then you probably have time for a delicious, home-made breakfast. Ok, usually I just grumble and complain about being up before I'd like and then I choke down a bowl of cold cereal.


But today I decided to be cheerful and I made the fluffiest pancakes in the history of pancakes. They're also lactose-free!

Lactose-free chocolate chip pancakes

2 C flour
3 T sugar
2 T baking powder
2 tsp salt
2 large eggs
1 1/2 C almond milk (or other milk substitute you love)
3 T vegetable oil
1/2 C chocolate chips substitute (I buy soy/nut/dairy-free chips from Target)

Sift all dry ingredients together in a large bowl. Mix wet ingredients in a separate bowl. Gradually combine dry ingredients with wet and whisk until fully mixed. Cook on griddle heated to 300 degrees. I top mine with warm syrup and Earth Balance (fake) butter. Perfection.

I once watched Aspen devour 3 giant chocolate chip pancakes from Denny's (she got a free kid's meal through the reading program at our local library) and I was AMAZED. So I'm glad I have a super-easy, super-delicious recipe of my own to fill her up at home.

Make these for the fourth and your family will definitely be ready for a day full of parades, pools and pyrotechnics.
